Lately I've been in quite the baking mood and not just one thing in particular but all sorts of things from like fancy desserts to simple salads to different dinner ideas that I come up with or find recipe's for. Today I did a whole lot of baking. The weather was kind of nice for it- cool breeze coming in the windows, not much sun. So I started off with baking a loaf of egg bread and I only had one mishap while going through this process. I spilt a bunch of flour all over the kitchen floor. The bread in the end turned out nice and soft and I was very proud of it.( if I can brag a little bit). I have only tried making bread once before (French bread) in the fall but it turned out way to crunchy. I didn't think I'd have the nerve to try baking bread again till I got in one of my moods today. See I get in these moods where I crave baking and I don't necessarily want to bake it to eat it, I just enjoy mixing things together and coming out with good results. It probably sounds weird I know. LOL
Anyways after I spent time on the bread I made a new dinner recipe that I had not tried before. You start with skinless, boneless, chicken breasts that I had to beat with my plastic mustard bottle to thin them out.(I still do not own a rolling pin), then you spread a little bit of ricotta cheese, put a thin layer of spinach and some slices of mozzarella on the chicken and roll them up. You then ether toothpick'em or tie them with kitchen string to keep together and of course cook. ;) They were yummy. I think my hubby was pleased too. Tomorrow I am making simple lazy lasagna unless I decide I want to be in the kitchen again. Oh if anyone has any pass along (buffet) dish recipe's or ideas that do well at picnics let me know. Our church has their picnic this coming Sunday and I want to try making something I have not done before. ;)

ReplyDeleteYummy sounds good. I wish I had the time to bake (well learn). I just ate dinner 1 1/2 hrs ago which my lovely mother made for me. With working shifts like 11:30-8 you really dont get to practice or bake/cook much. Sometimes (hardly ever) i'll feel like baking so I bake cookies or something easy. TTYL cuz.

That chicken dish does sound good! I don't have a rolling pin either... I use a soup can usually. My hubby's the bread baker in our family - he gets that from Grandma. Someone's gotta carry out the tradition!!
